Healthy Chocolate Chip Cookie Recipe

I know we are all probably smack dab in the middle of our New Years’ resolutions or goals. It is the second full week of the year and hopefully you are staying on track. If you are anything like me, and you have a sweet tooth, allow me to introduce you to one of the yummiest healthy chocolate chip cookie recipe.

The Best Chocolate Chip Cookies

So I will say that we did not come up with this chocolate chip cookie recipe by ourselves. We found this recipe on Pinterest from Abra’s Kitchen. We did make a few ingredient tweaks to make them a little healthier and fit within our diet needs. So here is everything you need:

Ingredients:

  • Almond Flour – 2 1/2 cups
  • Coconut Sugar – 3/4 cup
  • Coconut Oil – 1/2 cup melted
  • 1 Large Egg
  • 1 Large Egg Yolk
  • Vanilla Extract – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Dark Chocolate Chips – 1 cup
  • Baking Soda – 1 teaspoon

Mixing The Cookie Dough

Mix the almond flour, salt, and baking soda together. In a separate bowl mix the melted coconut oil and coconut sugar. After it is mixed, add the vanilla extract, the egg, and the egg yolk. Then you can mix in the bowl of almond flour, salt, and baking soda mix. After you have that pretty well mixed, it is now time to add in the chocolate chips. Once the chocolate chips are mixed place a piece of parchment paper or wax paper on the top of the bowl and place it in the fridge to chill for 1 hour.

Baking The Chocolae Chip Cookies

After the dough has chilled for an hour, you will want to preheat your oven to 325 degrees. You will then use a spoon to place the dough into balls on a cooking sheet or pizza stone. You can gently press the dough down to make it a little more like a cookie shape instead of a round ball. After the oven is finished preheating, cook for about 10-12 minutes depending on your oven. They may not look completely finished when you pull them out, but they will continue to cook a little more. Place them on a cooling tray and enjoy!
